This eBook was born out of the desire to make eating with plants more interesting. I wanted to create a meal that was not about being just a handful of greens on the side, overcooked yellow peas or boiled broccoli. But to create a full meal, made from vegetables, that was filling, nourishing and bound to create some excitement on the sidelines.

Vegetables are so diverse and can offer bountiful nutrition. I see constantly in clinic that many are not eating enough. They are cheap when in season and on top of that they can really lift a boring meal.

So, I ask you. Let’s change it up, shop at your local farmer’s markets. your green grocer or the periphery aisles of the supermarket, get back to the kitchen and let’s go meat-free at least one day a week.
